This IJMS section is about molecular sciences of foods and drinks having a medicinal effect on human health. Molecular pharmacology of isolated natural products and synthetic organic compounds is also considered. Certain small amounts of natural products in food,  mainly in phytonutrients, and beverage, etc., such as phenolics, carotenoids, vitamins, sterols, may have biological properties/bioactivities (antioxidant, antimicrobial, anticancer effects). All papers will be peer reviewed as other papers of IJMS. We publish only scientific studies including well controlled in vitro studies, animal models, epidemiological studies and/or clinical studies, and correlation of chemical composition and bioactivity.

Topics of special interest include, but are not limited to the following:

Function as Antioxidant or Radical scavenger, Antimicrobial effect, Functional foods, phytonutrients, anticarcinogens.
Chemopreventives: Carveol (a natural terpenoid alcohol, a potential antiangiogen), S-Allyl cysteine (a potentional cholesterol lowering agent); pharmacology studies.
Phytochemicals and brain function, Ting fission metabolites of Phytochemicals, Prevention of diabetes by Phytochemicals, Nutraceuticals, Structure-activity relationship, Tissue distribution of functional food factors, Metabolism of food factors, Enhancement factors for gastrointestinal absoprtion of Phytochemicals;
